PESTO FETA DIP
INGREDIENTS:
2 Cups fresh basil (No stems).
1/4 Cup pine nuts.
2 Large garlic cloves
1/2 Cup of good quality Extra Virgin Olive Oil (Save 2 Tbsp for garnish).
3/4 Cup crumbled fresh feta (Buy the one sold by the chunk).
1/4 Cup fresh parsley
INSTRUCTIONS:
In a food processor process on high the fresh basil, pine nuts and garlic.
Add the feta and mix on high for a few seconds, until well incorporated.
With the food processor going, pour in the olive oil.
last, but not least… add the parsley and process on high.
Scoop into a serving bowl, and garnish with the remaining olive oil, pine nuts and some parsley leaves.
Pair with delicious sour dough bread slices that have been toasted over olive oil. ENJOY!!
