PESTO FETA DIP

INGREDIENTS:

2 Cups fresh basil (No stems).

1/4 Cup pine nuts.

2 Large garlic cloves

1/2 Cup of good quality Extra Virgin Olive Oil (Save 2 Tbsp for garnish).

3/4 Cup crumbled fresh feta (Buy the one sold by the chunk).

1/4 Cup fresh parsley

INSTRUCTIONS:

  1. In a food processor process on high the fresh basil, pine nuts and garlic.

  2. Add the feta and mix on high for a few seconds, until well incorporated.

  3. With the food processor going, pour in the olive oil.

  4. last, but not least… add the parsley and process on high.

  5. Scoop into a serving bowl, and garnish with the remaining olive oil, pine nuts and some parsley leaves.

  6. Pair with delicious sour dough bread slices that have been toasted over olive oil. ENJOY!!
