BLOOD ORANGE CAPRESE SALAD

INGREDIENTS:

3 Sliced Vine tomatoes (You can also use heirloom tomatoes if available)

1 Pack of Mozzarella slices (Costco) (Shaped into stars with a cookie cutter)

4 Blood Oranges (Sliced)

Basil leaves for garnish

Salt, freshly ground pepper, red pepper flakes and dry chives for seasoning

Balsamic glaze (Trader Joe’s)

INSTRUCTIONS:

Arrange the slices in whichever order you desire. I like for the tomato to be at the very bottom for a prettier arrangement, but you do whatever looks best to you. This yields for three roads of salad, feel free to double, triple the ingredient list as needed.

Once you have your salad arranged, garnish with basil by putting the basil leaves on the side, carefully tucking them under the tomatoes. Season with salt and pepper, and sprinkle a generous amount of the pepper flakes and chives.

Last but not least… drizzle the salad with the glaze and serve.
