PUMPKIN MASCARPONE DIP

INGREDIENTS:

1 Cup Pumpkin puree

8 Oz. Mascarpone cheese

8 Oz. Cream cheese

1 1/2 Cup Marshmallow cream

INSTRUCTIONS:

Combine all ingredients (except for the pumpkin puree) in a mixing bowl and give them a good mix until well incorporated and you have reached a creamy consistency. Add in the pumpkin puree and reduce the speed to a lower medium setting. Mix well until it becomes creamy and fluffy. Don’t over mix, or mix at high speed after you have added the puree, or else you will run into the issue of the mascarpone cheese curling up on you. Serve with your favorite sweet chips or crisps and sprinkle some pumpkin spice on it. I love Trader Joe’s pumpkin cranberry crisps as a pairing. ENJOY!
