TOMATILLO SALSA

INGREDIENTS:

6 Tomatillos

3 Serrano Peppers

1 Small onion

4 Small garlic cloves (Crushed)

2 Tbsp Olive oil

Salt to taste

INSTRUCTIONS:

Preheat oven to 375°F

On a baking sheet lined with parchment paper, arrange tomatillos cut in half, onion cut in half and serrano peppers. Drizzle oil over it evenly and salt to taste.

Roast until tomatillos are soft and onions are slightly charted.

Transfer to molcajete and add crushed garlic. Here is the part where you get to work out those muscles… go at it with the molcajete piedra and mash the whole thing until the consistency of a salsa. It’s okay if there are some pieces that aren’t fully mashed. That’s the fun part of a molcajete sauce.

Serve with chips and enjoy!
