REFRIED BEANS DIP WITH MEXICAN SAUSAGE (LONGANIZA)

INGREDIENTS:

1 16 oz. Can of refried beans

1/2 lb. Vegan chorizo (Trader Joe’s)

2 Tbsp Olive oil

2 Tbsp Chipotle adobo sauce

Vegan queso fresco and chopped scallions for garnish

Tortilla chips ( I make mine by cutting regular corn tortillas into triangle pieces and deep frying them until crispy)

DIRECTIONS:

Heat up the oil in a medium/large pan and squeeze the soy chorizo out of the casing and into the pan. Cook chorizo until done. Proceed to make your tortilla chips by cutting them into triangles and deep frying them in vegetable oil. You can also use store-bought chips if that’s your preference.

Add the can of refried beans to the reheated chorizo and mix well until well incorporated. Add chipotle adobo sauce and give it another quick mix.

Plate as desired. You can use a bowl and the chips to the side, or you can do what I did here and place the chips around. Add some of the vegan queso fresco and chopped scallions and drizzle a little more of the chipotle adobo sauce for an extra kick, if desired.

Serve nice and warm. Enjoy!
