JALAPEÑO AVOCADO BURGERS WITH CARAMELIZED ONIONS (MEXICAN STREET FOOD)

INGREDIENTS:

7 oz. ground beef per patty ( I know my measurements are a little weird, but trust me, you want each burger this size. Use as much ground beef as needed according to the size of your party.)

Maggi Jugo Seasoning sauce (This is the secret ingredient to juicy tasty Mexican burgers and it is found at Walmart or any Mexican market.)

Salt and pepper to taste

2 Tbsp oil of your choice

1 Onion (thinly sliced)

Can of pickled diced jalapeños (It’s important to get a Mexican brand such as La Costeña.)

Plant-based cheddar slices

3 Avocados

Mayo, mustard, and Ketchup

1 bag Hawaiian burger buns

OPTIONAL: Potatoes for homemade french fries and vegetable oil enough to deep fry.

INSTRUCTIONS:

In a glass mixing bowl combine your meat, salt, pepper and Maggi seasoning. I made two burgers and used 1 1/2 tbsp of seasoning. Add as much as needed for the amount of burgers you will be making.

With clean hands get in there really good and mix until the Maggi seasoning is well incorporated into the meat. Make sure to not go too heavy on the Maggi seasoning. It has a strong flavor.

Form each patty, cover with saran wrap if making in advance and refrigerate until ready to cook.

Slice onion into thin slices and set aside as well.

If you are making homemade fries, this is when you would want to work on that.

Peel as many potatoes as needed and cut them into 3/8 of an inch batons. Heat up the oil and proceed to deep fry when you are ready to start cooking your patties. Have a plate covered with a couple of paper towels ready for when the fries are done. This will help drain the oil. Add salt to taste.

I like to simultaneously cook everything so that nothing is cold when I am ready to serve.

If you are done cutting your fries and are ready to fry, this is when you will also proceed to grill your patties and caramelize the onions. I like to use cast iron for grilling my burgers. I love my Le Creuset for this job, but feel free to use whatever grill you have on hand.

While that’s going. Caramelize the onions by heating up oil on a medium-sized pan and adding all the slices. Once they start browning and become caramelized (soft), add as many jalapeño slices as you wish, depending on the level of heat you like. Sometimes I will add a little bit of the picked juice from the jalapeños to add some extra flavor.

Cook burgers until they reach 160°F and remove from heat. Add slices of cheese to melt while they are still sizzling hot on the grill.

Time to assemble! Toast the buns at a medium setting and add mayo to each side. Place the patty with melting cheese on each bottom, add caramelized onion/jalapeño mix, add avocados, and finish with a few squirts of ketchup and mustard. Serve with the hot homemade fries.
