ENSALADA RUSA (CHICKEN SALAD)

INGREDIENTS:

1 Rotisserie Chicken (1/2 of the breast)

3 Potatoes (cooked and cubed)

2 Carrots (cooked and diced)

16 oz. Mayo

1 14oz can of sweet peas

1/4 Cup jalapeños (diced)

Salt and pepper to taste

Ritz Crackers (or fun shapes like the ones pictured)

INSTRUCTIONS:

  1. Boil the potatoes and carrots until fully cooked. Cube, dice and add to a medium/large mixing bowl.

  2. Shred the chicken breast and add to the bowl.

  3. Rinse the sweet peas… and yes, you guessed it… right into the bowl.

  4. Add the jalapeños, mayo and salt and pepper.

  5. With a wooden spoon combine everything until well incorporated.

  6. Serve on cracker or refrigerate until ready to use.

  7. ENJOY!!!
