GF VEGAN PEANUT BUTTER COOKIES

INSTRUCTIONS:

1 Cup peanut butter (I like to use Trader Joe’s)

1 Cup sugar

2 Tsp vanilla extract

1 Cup of GF flour

1 Tsp baking soda

1/8 Tsp Salt

1/4 Cup almond milk plus 3 tsp.

INSTRUCTIONS:

Preheat oven at 350ºF.

  1. In a mixing bowl, cream together the peanut butter and sugar. Add in the vanilla extract.

  2. In a separate bowl, mix the dry ingredients (flour, baking soda, salt)

  3. While the peanut butter mixture is going, slowly add in the dry ingredients and mix until fully combined. Add in the milk and mix until well combined. Do not over mix.

  4. Line a baking sheet with parchment paper and proceed to roll the dough into 1 1/2” balls. Use a cup to press them flat and press on with a fork for a fun look.

  5. Bake for 8-12 minutes, or until just starting to turn golden on the edges. (adjust the time as needed according to your oven’s settings)

  6. Let cool complete and Enjoy a guilt free treat!
