LEMON DROPS

INGREDIENTS:

1 Cup softened butter

3/4 Confectioners sugar

Zest from one Lemon

2 Tbsp lemon juice

2 Cups all- purpose flour

1/4 Tsp Salt

1/4 Cup of Confectioners sugar for dusting

INSTRUCTIONS:

Preheat oven to 300ºF. Line baking sheet with parchment paper and set aside.

Combine dry ingredients (flour and salt)

Beat butter and sugar until creamy and fluffy. Beat in lemon zest and juice. Slowly add the flour mixture until you have a very soft dough.

Shape dough by rounded teaspoonfuls into balls and place on baking sheet.

Bake for 25 minutes or until lightly browned. Cool for at least 10 minutes and dust with remaining powder sugar.
