CHOCOLATE MALLOW DROPS

INGREDIENTS:

1 Cup sugar

1/2 Cup butter

3/4 Cup heavy cream

1 Egg

1 Tsp organic pure vanilla

1 3/4 Cups all-purpose flour

1/2 Cup unsweetened cocoa powder

1/2 Tsp salt

12 Large mallows (Cut in quarters.)

Chocolate Glaze (Recipe follows)

Pecans for garnish

CHOCOLATE GLAZE: Combine 1/2 cup whipping cream and 1 tbsp butter in a small saucepan; bring to a boil over high heat. Add 1/2 cup dark chocolate. Stir well until a sauce forms. Let stand for a few minutes.

INSTRUCTIONS:

  1. Preheat oven to 350ºF

  2. Beat sugar and butter until light and fluffy.

  3. Add cream, egg and vanilla; beat until blended.

  4. Drop spoonfuls of dough onto lined baking sheet.

  5. Bake for 8 minutes and remove from the oven. Add the mallows by gently pressing them into each cookie.

  6. Place back in the oven and bake for another 4 minutes.

  7. Remove from the oven and cool completely.

  8. Add chocolate glaze and press a pecan (optional) on top for garnish.

  9. ENJOY!
