STUFFED CARAMEL BEIGNETS

INGREDIENTS:

2 Eggs (separated)

1 Cup all-purpose flour

1 Tsp baking powder

1/8 Tsp salt

1/2 Cup sugar

1/4 Cup water

1 Tbsp butter (melted)

2 Tsp grated lemon peel

1 Tsp organic vanilla extract

1 Bag of caramel chips

Confectioner’s sugar for dusting

INSTRUCTIONS:

  1. Place egg whites in a small bowl; let stand at room temperature for 30 minutes.

  2. Meanwhile, in a large bowl, combine flour, baking powder and salt.

  3. Combine the egg yolks, sugar, water, butter, lemon peel and vanilla extra in a separate bowl and give it a quick stir.

  4. Pour into dry ingredients and mix well until a thick batter forms.

  5. Beat egg whites on medium speed until soft peaks forms.

  6. Fold gently into batter.

  7. Preheat oil at 375ºF (Deep fry temperature)

  8. Drop spoonfuls of butter into hot oil and carefully flip them over.

  9. Remove from oil and let all the excess oil drain by placing them on a plate lined with a paper towel.

  10. Let them cool for at least 10 minutes

  11. While the beignets are cooling down, proceed to heat up the caramel chips according to package instructions and remove from heat.

  12. Pour cool caramel sauce into a piping bag with tip 230 (meant for filling).

  13. Proceed to fill them in with the caramel sauce.

  14. Dust them with confectioner’s sugar and serve with extra caramel sauce.
