GRILLED STUFFED PORTOBELLO MUSHROOMS WITH PLANT BASED CHORIZO.

INGREDIENTS:

3 Portobello Mushrooms (Medium to Large size)

Plant based chorizo (Trader Joe’s)

Plant based “Beef”(Trader Joe’s)

1 Serrano pepper (Finely chopped)

1/2 Onion (diced)

Avocado Oil Cooking Spray (You may use olive oil as a substitute)

Fresh chive snips to garnish

INSTRUCTIONS:

  1. Grill the portobellos in whichever method you choose to do. Make sure that they are well cooked on both sides, particularly in the center.

  2. While that’s going… sauté the onions and add the chorizo, “beef”, and serrano pepper. Cook until well reheated. (Both the chorizo and beef are pre-cooked).

  3. Proceed to stuff the portobellos with the chorizo mixture.

  4. Garnish with chives and serve immediately.
