SWEET FLUFFY BISCUITS
INGREDIENTS:
2 1/2 cups all-purpose flour
1/2 cup sugar
5 tsp baking powder
1 1/4 salted butter (cubed into little pieces)
1 1/2 cup whole milk (cold)
BAKING DIRECTIONS:
Preheat oven at 400°F and line up a baking sheet with parchment paper.
In a large prep bowl combine flour, sugar and baking powder. Give it a quick mix with a wooden spoon or your hands. Add cubed butter and with clean hands get in there and give it a quick “massage” until the butter and flour mixture feels crumbly. You can also use your food pulsing setting on the food processor if you have one. I actually prefer to do this part with my hands. I feel that it gives me more control over the texture of the biscuits.
Add cold milk and mix well with a wooden spoon.
Spoon a good amount onto the baking sheet. These will rise quite of bit in the oven because of the amount of baking powder that we are using.
Bake biscuits for 15 minutes or until lightly browned. Pull out of the oven and let them cool for a few minutes. You can serve them at this point for a rustic look, or you can use a biscuit cutter and shape them like I did in these pictures. If you don’t have a biscuit cutter, you can also use a clean cup sprayed with a non-stick cooking spray.
Serve with butter or fruit preserves.
