ROASTED TOMATO & RICOTTA CROSTINI APPETIZER

INGREDIENTS:

1 Baguette

EVOO

2 Garlic cloves

1 Pint grape tomatoes

1 Pint ricotta cheese

Basil

Salt and pepper to taste

INSTRUCTIONS:

  1. Preheat oven at 400ºF

  2. Give the tomatoes a quick rinse. Pat dry with a paper towel and add them to a small baking pan. Drizzle EVOO and season well with salt and pepper.

  3. Slice the baguette in diagonal one inch slices.

  4. Preheat 3 tbsp of EVOO on a medium/high flame until nice and hot.

  5. Mince the garlic cloves and rub all over the bread slices. Proceed to add to the pre-heated EVOO. Cook until crispy on both sides

  6. Spread a generous amount of ricotta on each slice and top with roasted tomatoes.

  7. Garnish with Basil and ENJOY!
