QUICK BURRATA APPETIZER FOR TWO
INGREDIENTS:
Burrata Cheese (I get mine from Trader Joe’s)
Pesto sauce (Optional to make your own)
3 Heirloom tomatoes
A couple of red onion slices
1 Jar of capers
1 Baguette
5 Tbsp Olive oil
5 Garlic cloves (crushed)
Balsamic glaze for drizzling (Not to be confused with balsamic vinegar)
Dill for garnishing
Salt and pepper for seasoning
HOW TO MAKE IT:
On a serving plate of your choice spoon some of the pesto sauce on the top middle of the plate. With a wooden spoon or any large spoon, spread down the pesto sauce by dragging down the spoon on a swipe down motion. I hope that makes sense.
This just makes a nice and clean sauce bed for your burrata cheese to sit on. Place the burrata in the middle and add some dill as garnish.
Slice the tomatoes. I like to use one of each color for an aesthetically pleasing look, but you can use whatever you have. Arrange them on the right side of the plate and add the onion slices. I sometimes will pickle the onions before hand if I have the time. You can do whatever you prefer.
Garnish with some capers, dill and season well with salt and pepper.
Next, heat oil on a pan of your choice. I usually gravitate towards my grilling pan because I like the grill lines on the bread. Use whatever you have handy.
Slice the baguette and pan fry until nice and crispy on both sides. Rub the crushed garlic on each slice while still nice and hot. Arrange them on the left side of the burrata and drizzle with the balsamic glaze.
That’s it! Easy, tasty appetizer for two that is perfect for your Valentine’s date, or just for a night in with your honey.
