ULTIMATE SUPER NACHOS
INGREDIENTS:
Quinoa Beans bag of chips (Trader Joe's)
1 packet Soy Chorizo
3 Cups sliced portoballo mushrooms
1 Shallot (Sliced)
3 Tbsp Avocado Oil
1 Can black beans
1 Cup shredded Monterrey Jack cheese
1 Cup Pepper Jack Cheese.
1 Cup Greek Yogurt
1 large avocado (Sliced)
1/2 Cup Avocado salsa
Salt, Pepper, Red pepper flakes for seasoning
Homemade Pico de Gallo optional
INSTRUCTIONS:
In a medium skillet heat up oil and add the sliced mushrooms and shallots. At the same time heat up the beans and the soy chorizo. The chorizo is pre-cooked so it only needs a few minutes on medium heat and about a tbsp of oil.
Season the mushrooms with all of the seasonings on the list to taste and cook well until nice and brown.
To assemble the nachos lay some tortilla chips on your serving plate, add the hot soy chorizo, the crispy mushrooms and shallots, the beans (Make sure no juice goes on the plate) avocado salsa, and cover with as much cheese as your heart desires. I love cheese so I go crazy with it. :)
Heat up under a griddle or you can just use the microwave to melt the cheese.
Top with Greek Yogurt, avocado slices (And optional but equally delicious, homemade pico de gallo).
That's it! These are so easy to make, but so incredibly tasty. They make me think of street food in Mexico City.
