JALAPEÑO PEACH SALSA BEEF TACOS
INGREDIENTS:
1 Peach (Preferably not to ripe)
1 Jalapeño pepper
1 Shallot
Small bunch of cilantro
1 Lime (divided in half)
Salt to taste
Cooked meat of your choice ( I used a broiler cut; cooked medium rare)
Siete Foods Cassava flour tortillas (grain free, gluten free, guilt-free) - You can use whatever tortillas you have, the Siete is just for the heathy factor.
Tomatillo Salsa (recipe to follow)
INSTRUCTIONS:
(Recipe yields 4 tacos)
FOR THE PEACH SALSA:
Dice the peach, jalapeño and shallots into small cubes and give the cilantro a quick chop.
Combine all ingredients in a bowl, add a half of the lime’s juice, and season to taste with sea salt.
Give all the ingredients a quick mix and voila… we are in business with a super easy, delicious peach salsa.
FOR THE TOMATILLO SAUCE:
On a baking sheet roast 4 tomatillos, 1 to 2 jalapeños depending on the level of spiciness you prefer, 2 garlic cloves and 1/2 of a medium sized onion until nice and charred.
Pour everything into a mixer and give it a good blend until it reaches the consistency of a sauce.
Add a small handful of cilantro and give it a quick pulse until the cilantro is blended but you can still see small pieces in the sauce.
Squeeze the other half of the lime into the blended sauce and pour into a nice sauce bowl.
TO ASSEMBLE THE TACOS:
Simply give the tortillas a quick char over the flame of your stove (if you don’t have a gas stove, you can simply reheat them with your preferred method).
Arrange the meat on the warm tortillas.
Add a couple of spoonful jalapeño salsa goodness.
Top with tomatillo sauce and squeeze some lemon.
Voila… amazing tacos that everyone can enjoy. So full of flavor, and perfect for any occasion.
