CRISPY BAKED GARLIC YUCA FRIES (CASSAVA FRIES).
INGREDIENTS:
3 Large yucas
Olive oil to drizzle
3 Garlic cloves (minced or crushed)
1/2 Tsp dry dill
1/4 Tsp Ground red pepper
Salt and pepper to taste
INSTRUCTIONS:
Cut the yucas in halves and boil them until nice and soft (but not falling apart). Remove from the water (make sure to drain all excess water) and place them on a plate lined up with a couple of paper towels. Let them rest/cool.
Peel off the thick skin carefully and cut them in halves or quarters, depending on how big in diameter they are.
Place them on a lined with parchment baking sheet and drizzle generously drizzle olive oil all over them.
Add all seasonings and give them a quick toss with your clean hands.
Bake for 450ºF for about 35 minutes (or until golden, nice and crispy).
Enjoy with dip of your choice.
