SALSA VERDE ZOODLES WITH GRILLED CHICKEN

INGREDIENTS:

2 lbs Zoodles (I buy mine from the grocery store, but you can also use homemade).

2 Tbsp EVOO or Avocado oil.

1 Jar of your favorite salsa verde. (I use Nuevo Tex-Mex Salpica Cilantro Green Olive Salsa).

3 Chicken grilled chicken breasts (Cut in strips).

INSTRUCTIONS:

  1. Preheat oil and add the zoodles.

  2. Season well with salt and freshly ground pepper.

  3. Add can of salsa verde and give it a good stir until the noodles are fully covered with the sauce.

  4. In the meantime, grill the chicken to your cooking preference.

  5. Assemble everything by plating the zoodles, adding a little bit of the salsa verde.

  6. Top with grilled chicken strips.

  7. ENJOY!
