ROASTED EGGPLANT WITH SPICY HUMMUS AND POMEGRANATE

INGREDIENTS:

2 Eggplant

2 Tbsp Olive oil

Salt and pepper to taste. 

Sabra Hummus (Supremely Spicy)

Pomegranate seeds for garnish.


LET'S GET COOKING:

Preheat oven at 375°F.  Slice the egg plant vertically in 3/4 of an inch thick slices. Place the slices on a baking sheet lined with parchment paper.  Drizzle the olive oil all over the slices and season with salt and pepper. 

Bake for 25 minutes or until slightly charred. Remove from the oven and let them cook for a few minutes.  While still warm, spread a generous amount of Sabra Hummus on them and sprinkle the pomegranate seeds all over. 

This is one of my go to dinners when I'm in need of something fast, easy and delicious. Serve with a simple vegetable salad, quinoa or brown rice.  Make it an appetizer, a snack or a full on dinner...it works every time!
