FISH AND CHIPS (HEALTHY VERSION WITH ZUCCHINI CHIPS)

INGREDIENTS:

5 Tilapia fillets

1 cup bread crumbs. (You can use GF or regular)

1 egg

3 Zucchinis (thinly sliced)

Seasoning: salt, ground pepper, ground red pepper, red pepper flakes, onion powder and garlic powder. 


Dipping sauces: Mixture of ketchup with sriracha sauce and store-bought parmesan garlic wings sauce. 


INSTRUCTIONS:

Preheat the oven at 350° F

Combine the seasoning spices in a small bowl and use half of the mixture to coat the fillets. Use the remainder of the mixture to do the same with the zucchini slices. 

On a serving plate mix the bread crumbs with a little salt, pepper, garlic powder and onion powder. Crack the egg and slightly beat in a container big enough for breading.

Proceed with breading both items, starting with the zucchini and then doing the fillets. Dip them in the egg and then coat them well with the bread crumbs mixture. 

Line a baking sheet with parchment paper and arrange the breaded fish and zucchini chips and bake for approximately 25 minutes or until done. 

Serve with lime wedges, dipping sauces and enjoy.
