PLANTAIN CHIPS AND GUAC CAKE

INGREDIENTS:

5 Green Plantains (as in not ripe)

Enough Avocado oil for deep frying

2 Large Avocados

2 Tbsp chopped red onions

1 Tbsp diced jalapeños

2 Tbsp chopped cilantro

2 Tbsp Juice from a lime

Salt to taste

INSTRUCTIONS:

Using a vegetable peeler slice the plantains into really thin slices. Proceed to deep fry them. Do not season with anything. Simply transfer them onto a plate lined with paper towels to drain the excess oil.

While that’s going, scoop the avocados into a small mixing bowl and give them a good smash with a fork. Add onions, jalapeños, cilantro, lime juice and salt. Mix well and either serve that way, or if you want to do the whole cake presentation then simply use a biscuit cutter. Fill to the top and slowly release it until you have a little cake. Garnish with left over cilantro, onions and jalapeños.
