MANGO CHIA PUDDING WITH HOMEMADE GRANOLA

INGREDIENTS:

1 1/2 Cups frozen mango chunks

1 Cup Almond milk (Use coconut milk if you want thicker consistency)

4 Tbsp Chia Seeds

1 Tbsp Organic Pure Maple Syrup

Homemade granola (recipe coming soon)

Organic raw honey for drizzling.

Combine 1/2 Cup mangoes, almond milk, chia seeds and maple syrup in a blender. Give it a quick blend and chill in the fridge overnight.

In the morning when you are ready to eat your breakfast, spoon some of the homemade granola at the bottom of your cup, add some of the chia pudding and some of the remaining frozen mangoes. Repeat until cup is full. Top with more frozen mangoes and granola. Drizzle honey on top.

This is a super easy, refreshing, healthy choice for breakfast. It’s my go to when I’m trying to behave, yet have something sweet to eat. I even make it as a dessert some days.
