ROASTED CARAMELIZED CARROTS WITH CREAMY TOMATILLO DRESSING

INGREDIENTS:

7 Carrots (throughly washed, but unpeeled and leave stems on).

2 Tbsp Olive oil.

1 Tbsp dry dill

salt and pepper to taste

Tomatillo dressing (Recipe here).

INSTRUCTIONS:

  1. Preheat oven at 385ºF

  2. Place washed carrots on a baking sheet and drizzle olive olive over them. Add dill, salt and pepper and roast until fully caramelized (Approximately 20-30 minutes depending on your oven).

  3. Remove from the oven and drizzle tomatillo dressing all over them. Enjoy while nice and hot.
