GF OAT BANANA PANCAKES
INGREDIENTS:
8 ripen bananas
3 Eggs
3 Cups GF oat flour (you can make your own by using three cups of GF oats and running it through a food processor or heavy duty blender)
1 Tsp Pure vanilla
INSTRUCTIONS:
Preheat oven at 375°F
In a large bowl mash well the bananas until fully pureed. Add the eggs and mix until well combined. Add vanilla and flour. Mix until well incorporated.
On a baking sheet lined with parchment paper scoop as much of the batter onto it as you want the size of your pancakes to be. They will not double in size but will still rise some, so keep this in mind when calculating how much batter should go into each pancake.
Bake for 15 to 18 minutes and check if they are ready to be flipped. Usually you can tell because they seem pretty firm. Give them a quick flip so that you can brown the top of them as well. Usually about 5 to 7 more minutes in the oven.
Plate and serve immediately. Use as many toppings as desired.
