BAKED BRIOCHE FRENCH TOAST WITH TRUFFLE HONEY AND CRÈME FRAÎCHE

INGREDIENTS:

1 Loaf Brioche (I get mine from Trader Joe’s)

5 Eggs (beaten)

1 3/4 Cup Half and half

2 tsp Vanilla

1 tbsp Truffle honey

2 tbsp of butter for coating the baking pan

1 14 oz. Condensed milk

Raspberry Preserves

Crème Fraîche

Powder sugar

INSTRUCTIONS:

Preheat oven at 350°F

In a medium sized shallow dish combine beaten eggs, half and half, vanilla and truffle honey. Give it a quick mix until well incorporated. Dip each slice of bread in the mixture and arrange in the large baking pan that has been lightly coated with butter.

Drizzle some of the condensed milk on top of the bread and cover with foil. Bake for 25 minutes or until the bread appears to have developed a bit of a custard.

Uncover and broil for a minute or two at 400°F. Be really careful with this step as the toast can burn really fast if not watched. We just want for that soft browned delicious look.

Remove from the oven and plate on a large serving party plate.

Allow for toast to cool for about two minutes before adding the garnish, or else your crème will melt.

Once it has cooled off, add preserves, pipe some crème fraîche on it, drizzle some more of the condensed milk and as a final touch I like to sift some powder sugar on top of everything.
