VEGGIE AND EGG BREAKFAST TACOS WITH TOMATILLO SAUCE

INGREDIENTS:

1 Zucchini (Diced)

1 Yellow bell pepper (Diced)

1/2 Onion (Diced)

1/4 Cup Sun Dried Tomatoes

Salt, Pepper, Garlic Powder for seasoning

2 Cups Egg Whites 

1 Pack Siete Tortillas (I use the Casava ones)

1 Cup shredded cabbage (Garnish)

1/4 Cup diced green onions (Garnish)

1/4 Cup Feta Cheese

Tomatillo Sauce (Recipe at the bottom)


LET'S GET COOKING:

Start by preheating a medium to large cooking pan with the olive oil.  Add the zucchini, bell pepper, onion, sun dried tomatoes and seasonings.  Cook on medium to high heat for a few minutes until vegetables start to get charred. 

Mix in the egg whites to make a scramble. 

Meanwhile heat up the tortillas on the stove by placing them on a griddle. These tortillas cook really fast so make sure to keep an eye on them. 

Assemble your tacos by adding the scramble to the heated tortillas, garnish with shredded cabbage, green onions, feta and drizzle some of the tomatillo sauce.  Feel free to also add avocados.  Serve with a good refreshing made from scratch lemonade and you are set with a delicious breakfast, that's not only healthy but also sure to please your tastebuds. 


TOMATILLO SAUCE RECIPE:

Boil three tomatillos in a small sauce pan.  Add to blender with 1/2 onion, 2 garlic cloves, 1/2 avocado, 1 serrano pepper and a handful of cilantro.  Blend well until combined.  I like to squeeze a little lime juice into mine.  Season with salt and you are set!
