HOMEMADE POTATO CHIPS

INGREDIENTS:

3 large potatoes

EVOO - enough to drizzle the chips

Salt, pepper, and any other spices of your choice

OPTIONAL - 1 Cup Greek yogurt, 1 tbsp chipotle adobo sauce, and diced 1/2 red onion for dip

INSTRUCTIONS:

Preheat the oven to 400ºF

Slice the potatoes into thin slices

Line the potatoes on a baking sheet and drizzle with a generous amount of EVOO

Season with salt and pepper (add spices of your choice)

Bake for 12 minutes, or until nice and crispy

DIP:

Combine all three ingredients and give it a good whip. Add salt and pepper to taste

Remove the potato chips from the oven and serve immediately with the dip on the side.
