PAPAS FRITAS CON QUESO (STREET FOOD)

INGREDIENTS:

6 medium to large size Yukon potatoes

Enough olive oil to deep fry them

2 Cups Greek Yogurt

1/3 Milk of your choice

Homemade Salsa roja (See Recipe)

1/2 Lb. Queso Fresco


INSTRUCTIONS:

In a large pot boil the unpeeled potatoes until soft. Make sure to not over cook so that they will hold it's shape when frying.  Remove them from the boiling water and into a large bowl. Refrigerate for about an hour. This can be done the day before and just keep in the fridge until ready to use. 

Preheat oil and slice the potatoes into one inch slices. Proceed to deep fry them when oil is ready until nice and crispy. 

In the meantime, mix the yogurt and milk to create a cream you can drizzle on top of the potatoes. In Mexico they use Media Crema, which you may use. They are sold at Walmart. 

If you are wanting a lighter version, the Greek yogurt will work great. 

Also your queso fresco should be nicely crumbled and your salsa should be ready to go. 

Remove potato slices from cooking pan and let them rest on a paper towel to get rid of excess oil. 

While still nice and hot, drizzle the yogurt, salsa roja and top it all with queso fresco. 

These used to be one of my favorite things to get when we would go out to get street food in Mexico. Careful... you will find that they are addicting!
