FETTUCCINE ALFREDO WITH CRISPY PANCETTA AND TRUFFLE CHEESE

INGREDIENTS:

Alfredo sauce from made from scratch (SEE RECIPE DOWN BELOW)

1 Box Fettuccine pasta

1 jar fire-roasted peppers (Trader Joe’s)- Chop about 1/4 of the contents of the jar and set aside

1.4 oz Vegan pancetta

Italian truffle cheese (Trader Joe’s)

1 can chipotle or chipotle adobo sauce

Seasonings: Ground red pepper, garlic powder, onion powder, salt, pepper.

Olive oil

ALFREDO SAUCE RECIPE:

5 1/2 Cups Half and half

1/2 Cup Heavy cream

10 oz. Grated parmigiano reggiano cheese

5 garlic cloves (Crushed or finely minced)

Salt and Pepper to taste

LET’S GET COOKING:

Let’s start by making this delicious Alfredo sauce. In a large saucepan over low/medium heat combine the half and half, heavy cream, garlic and cheese. This is perhaps the more tedious part of the whole recipe, as you will need to keep whisking to avoid for the cheese to stick to the bottom of the pan. You can leave it unattended for a minute or so, but don’t forget about it.

Trust me, it is worth the trouble!

Stay with the sauce and keep whisking away. This process will take approximately 45 minutes to an hour. Yes, I know. That’s a long time, but trust me… it is extremely worth the explosion of flavors in this recipe.

Reduce the heat as the sauce starts to thicken.

Cook the pasta at this point so that you can put everything together once the sauce is done.

Your sauce should be about ready and extremely creamy, and your pasta should be al dente.

An extra step that I like to take and that I believe makes a huge difference in reaching the perfect consistency of your pasta: I like to use a separate pan to add some of the pasta, about a tbsp of pasta water and then I add enough Alfredo sauce to make each individual dish.

You don’t have to do this extra step but I think it really makes a difference on the end result of your dish.

Plate your Alfredo fettuccine and add spoon on top of it some of the crispy pancetta and roasted peppers, use a zester to grate some of the truffle cheese on top.

This recipe is definitely a little bit more labor-intensive than my usual easy/fast recipe, but it is so worth it!
