GOUDA HAVARTI CHEESY PASTA

INGREDIENTS:

1 Pack of Penne pasta

130 grams shredded Gouda cheese

130 grams diced havarti

1 Cup half and half

1/2 Cup heavy cream

1 Tsp freshly ground pepper

1/2 tsp salt plus some for pasta water

1 Pack of garlic flavored crackers (You can also use rosemary or parmesan)

1 Tbsp dry parsley

COOKING INSTRUCTIONS:

In a sauce pan over medium heat combine the half & half, heavy cream, gouda cheese, pepper and salt.

Whisk milk/cheese mixture often until you reach a sauce consistency. This is the tedious job part, but it’s totally worth it.

5 minutes into the sauce making start cooking your pasta by following the packaging instructions, making sure that you cook until pasta is al dente (so as to be still firm when bitten.)

While that’s going crush the crackers in a food processor by using the pulse option, or if you don’t have a food processor, you can simply crush them by putting them in a Ziploc bag and using a heavy object to crush them.

Once the pasta and sauce are done, preheat oven at 375°F.

Butter a baking dish big enough to fit in your pasta dish, however much you are cooking. Just adjust the ingredients to the amount of pasta you are using.

Add cooked pasta, sauce and havarti cheese (Leaving some of the havarti aside for the toppping. Just calculate how much is enough according to your dish size.)

Mix until pasta, sauce and cheese are well combined. Evenly sprinkle the crushed crackers, remainder of the cheese and parsley.

Cover with foil and bake for 15 minutes. Uncover pasta and cook for another 10 minutes or until cheesy is bubbly and cracker crust is browned.

Serve immediately with some garlic bread and enjoy!
