THE ULTIMATE GARLIC ROASTED MASHED POTATOES

INGREDIENTS

4 Lb gold potatoes (peeled and cubed)

2 32oz vegetable stock

1 large garlic head (leave skin on it to roast)

1 tbsp Olive Oil

1/2 cup butter (divided in half)

1 tbsp onion salt (Trader Joe’s)

1/2 cup Whipping cream

6 oz Greek Yogurt

6 oz sharp white cheddar cheese

1 tbsp parsley flakes

Salt & Pepper to taste

COOKING INSTRUCTIONS:

Preheat oven at 250° F. 

In a small sheet of aluminum foil place the garlic head and brush with 1 tbsp of olive oil and sprinkle a pinch of salt and pepper. Wrap it tightly and into the preheated oven it goes to slow roast for about an hour.

Feel free to up the temperature up to 360 ° F if you are in a rush. Just make sure to watch it so that it doesn’t burn.

On a medium to large size pot cook the potatoes in the vegetable stock until nice and tender.

Transfer the cooked potatoes minus the broth, into a prepping bowl. Give them a good mash with your matching tool, or rice them if you have a potato ricer.
Add onion salt, pepper, half of the butter called for in the ingredients list and give it a good stir until combined. Give it a taste to make sure you are satisfied with the amount of salt. Add more if needed.

At this point your garlic should be fully roasted. Take it out of the foil and let it cool for a minute before adding to the potatoes.
Once cooled, squeeze all that delicious roasted garlic meat. It will be soft and slightly caramelized. Mix it well into the mashed potatoes to make sure all that good flavor goes into every bite.

Add Greek yogurt mixing throughly before adding the the whipping cream. Add the cheese and a few sprinkles of the dried parsley.

At this point I like to grab a wooden spoon and mix everything really well as I get it ready to be served.

In a small bowl combine the remaining of the butter with a pinch of onion salt and a pinch of dried parsley flakes. I like to use an ice cream scoop for the perfect rounded little touch of butter that I add right in the middle of the potatoes. 

And as a last step I like to sprinkle more parsley flakes all over which is optional.
