INGREDIENTS:

1 Loaf Irish Soda Bread (Trader Joe’s)

1 Block Kerrygold Dubliner Irish cheese (big enough to get 2 cups of graded cheese) (Trader Joe’s)

2 Tbsp Olive oil

1/2 tsp of each - Red pepper flakes, garlic powder, onion powder, ground red pepper (combined in a small mixing bowl.

Fresh oregano for garnish and extra flavor

INSTRUCTIONS:

With a small sharp knife slice the bread in a vertical direction without going all the way through the bottom of the loaf but deep enough that it can pull apart after it has been baked. Turn your loaf 90 degrees and slice the other side of the bread (horizontally).

Use your clean hands to slightly spread apart the loaf once it has been cut through so that you can make sure the cheese goes all the way into the bottom. Make sure to also be gentle so that it doesn’t come apart.

Proceed to stuff the bread with the cheese.

Add oil to the mixed spices and mix well. Brush all over the loaf once it has been stuffed.

Roughly chop the fresh oregano and sprinkle all over it.

Wrap in parchment (or foil if you prefer) and bake at 400°F for 20 minutes. Uncover and bake for another 10 minutes or until nicely browned.

Serve immediately for some serious cheesy goodness.
