NO BAKE OREO CHEESECAKE BITES

INGREDIENTS:

1 Package of OREO cookies (divided in half)

1/4 Cup Butter (Melted)

2 8 oz. Cream Cheese (Softened)

1/4 Cup Sugar

1 tsp. Vanilla

2 tbsp. Heavy Whipping Cream

Whipping Cream topping optional.

HOW TO MAKE IT:

In a food processor crush the first batch of cookies until finely pulverized. If you don’t have a food processor, you can use a Ziploc Bag and a rolling pin or something heavy to smash them.

Mix in melted butter and pulse until combined. If you are using the Ziploc method then just combine everything in a mixing bowl and mix well.

Next step: I used little tartlet cups, but you can line up a muffin pan with cupcakes wrappers or even use a 9 x 8 baking pan.

Whatever choice you have available, press the OREO mixture into it to form your crust.

Place the crust in the refrigerator to chill until you are ready to add your cream cheese mixture.

Set aside a few cookies from the second batch to garnish.

Using your food processor or stand mixer, beat the cream cheese, sugar and vanilla until well combined. Make sure to go around the edges with a spatula until everything has been well mixed. Add the whipping cream and pulse some more. Lastly, add the second batch of the cookies and gently pulse or mix until well incorporated into the mixture.

Pipe it or spoon it onto the chilled crust, and decorate with some left over pulverized OREOS. I like to also add a 1/4 of the cookie on top as a garnish (optional).

Chill for at least 2 hours or until firm. Sometimes when I am in a hurry I stick them in the freezer and that works just fine.

That’s it! No need for baking time and you have a delicious chocolaty yummy cheesecake.
