MEXICAN SPRINKLE SUGAR COOKIES (GALLETAS DE CHOCHITOS)

INGREDIENTS:

1 Cup unsalted butter

1 Cup sugar

1 Egg

1 Tsp Organic pure vanilla

2 1/2 Cups all-purpose flour

1/2 Tsp baking powder

1/2 Tsp baking soda

1/4 Tsp salt

Nonpareils sprinkles for coating

INSTRUCTIONS:

Preheat oven at 350°F and line a baking sheet with parchment paper to prevent sticking.

Cream butter and sugar for about 5 minutes or until a pale, almost white color has been reached. Turn down the speed and add the egg and vanilla.

In a separate bowl combine the flour, baking powder, baking soda and salt. Give it a quick mix to incorporate dry ingredients and add slowly and in three batches to wet ingredients.

Mix everything at a medium speed until the dough has been formed.

Chill for about 5 minutes in the refrigerator and proceed to form 1 1/2” balls. Dip into sprinkles until well coated and line up on the baking sheet.

With a mug or round drinking glass proceed to press on the cookies until they are the shape of a circle. Add more sprinkles if needed and bake for 12 minutes or until slightly golden.

Let them cool for a few minutes before serving. These can be made ahead if needed. Specially if you are baking them for a Cinco de Mayo party.
